Do you like to eat in restaurants? Do you have Celiac Spruce? If you find your eating problems unbearable read on.
When you order your dinner in a restaurant this is the time to unwind, relax enjoy the moment. You are not doing the shopping, food preparation, serving or the cleanup. This is your time to be wined and dined, savor the moment.
But what if when you walked into a restaurant and felt you were entering a mental war combat zone? When you know without looking that you can not eat anything on the menu. The next step is a conference with the chef or the manager or both in order for you to order your ordinary dinner just like everybody else, and hope when your plates is presented to you it is correct.
When you are on a special diet and you explain, what you can not eat even to the point of food contamination - when your food would touch the foods you are not allowed to eat and become contaminated, it is frustrating and you want to scream. I am hungry! I want to eat but you must understand, you must prepare my food fresh and the way I can eat it or I will get SICK!
My sister has had Celiac Spruce for over ten years. When it comes to traveling she is absolutely horrified when it comes to walking into a restaurant and ordering. Communication between her, the waitress, the manger and the chef is terrifying. She has to worry about the food and how it was cooked, what it was cooked on and if the utensils were clean when they touched her food. This also means eating in cheap restaurants is out. The more expensive to moderate priced restaurant is the only place she can eat to have her food modified for her diet.
I just spent four days with her on a trip. I was a witness to every meal we ate out together. I watched her face as she was explaining how her food had to be prepared. She was literally terrified of this ongoing ordeal, and with the final result of receiving her food on her plate correct or incorrectly.
This is a disease which at one time was considered so rare it virtually went undetected for years. Now the medical field has found out that Celiac Spruce is not that rare and people are being diagnosed every day. Celiac Spruce is often confused with lactose intolerance, irritable bowel syndrome, cystic fibrosis and other diseases. This disease can start in infancy. It is also a disease which can be carried and passed on in your family for generations.
TESTING FOR CELIAC DISEASE:
There is now a blood test available to test for Celiac Disease called an antigluten antibodies test. The next step would be a biopsy of the small intestine.
Symptoms:
(1) Abdominal Cramping, bloating, distention
(2) Appetite increased
(3) Back pain collapsed lumbar vertebrae
(4) Constipation
(5) Blood clotting - decreased
(6) Dehydration
(7) Mouth Sores
(8) Diarrhea, vomiting
(9) Passing Gas (flatus)
(10) Cramping in hands and legs
(11) Extremely dry skin
(12) Night Blindness
(13) Weakness, energy loss, fatigue,
(14) Weight Loss
(15) Depression
(16) Iron Deficiency
Celiac Disease, Celiac Spruce and Nontropical Spruce and are the names this disease is affiliated with. Celiac Spruce is a digestive disease which damages the villi of the small intestine. Without healthy villi, a person becomes malnourished; regardless of the quantity of food eaten. This means you can not absorb your food. Celiac Spruce is triggered by the protein called Gluten. This is a term which means the storage proteins found in grains of wheat, rye and barley.
Important: The Gluten found in corn and rice are not harmful to the people who have Celiac Spruce. When shopping for Gluten free food always read the labels on the cans and boxes. Never assume this particular food is Gluten free.
CURE:
The cure for this disease is eliminating Gluten from your diet. This may sound easy but it is not. Gluten is present in most processed foods. Cooking your own foods is the best way to make sure your food is safe and uncontaminated from other foods you can not eat. Take Vitamins daily.
RESTAURANT:
Always have your Chef Daniel's restaurant paper with you in your wallet plus a list of the foods you can eat. Cross contamination is the biggest risk when eating in a restaurant. A knife or fork which was used to cut bread and the same fork was used to dish out your vegetables. This can cause you to become ill for many days. Everyday is an adventure. When eating out with Celiac Spruce the adventure becomes a drama for each time you venture into a restaurant and want to eat.
This is some of the foods you can order in a restaurant:
(1) Steak, fish, chicken without anything but salt and pepper - Have the food placed on aluminum foil so it does not touch the grill.
(2) Salad with fresh vegetables - You can use a lemon wedge for dressing.
(3) Fresh fruit salad
(4) Fruit an apple
(5) Baked potato without oil or butter
(6) Steamed vegetables without anything but salt and pepper
The problem with ordering in a restaurant is that most of the food is prepared early in the morning. At this time it is oiled, or sauces are combined to give the food a great flavor. The food is full of preservatives. This is what a person with Celiac Spruce can not eat. Everything has to be made fresh without sauces or oils or whatever, or however the food is prepared. Oils and various other liquids can be used on the food but when ordering in a restaurant you do not know what is used and it is best to be on the safe side and leave it off, and eat your food plain.

Spring Valley Lions Club Meeting Action Needed
Spring Valley Lions Club Meeting Action Needed
At the Lions Club meeting on Wednesday, March 26, 2008, at 7:00 the past District Governor, Juanita Mangels Williams, District 4-L6 asked to get the word out about a fundraiser.
This fundraiser is a Pageant for young women. The Spring Valley club is sponsoring Liz Tamez. She is a community minded woman and is committed to supporting the Lions Club fundraising actives.
Liz is committed to raising funds for children who need glasses, hearing aids, summer camps for the Risk Children, and many other projects. She has served hot dogs and hamburgers at schools, participated in medical missions and many other projects.

Do You Watch Project Runway?
Well ladies and gentlemen the votes are in. The 3 remaining contestants on Project Runway have given their fabulous fashion designs runway extravaganza.
Jillian started off the show with her creative designs. They were invigorating, and wearable. Her clothing was definitely markable to the mass population of the world. She did not win Project Runway but her career is set. She will never have to worry about her clothing designs. The clothing manufactures and big design houses will be knocking down her door. Rami also presented an original and creative array of fashion clothing. His was both for casual, business and evening wear.
The judges did not care for the colors he chose to represent his clothes. I for one loved the colors of the clothes. The two blue suites were perfect, after all they were business suites. The judges did not like too much black. It was hard to please them. I love color in clothing and I wish to see more of it in clothes. The black dress with the weaving will be reproduced in mass. It was his idea and I hope he get to reap the rewards before somebody steals the idea out from under him.
He also will not be in want for a clothing designer job. The establishment will be knocking down his door.
Christian is the winner. Yes his clothe were fabulous and he is only 21 years of age. They really stood out as exquisite and the creativity was none ever seen before. The only problem I have with his clothing designs are where is his market. Yes there are men and women who will wear his clothes but you can not wear them to work or for casual wear. They certainly did make a immense statement. He is here to stay. I think all three of the contestants did a fabulous, impressive, creative clothing designs and show.
They are all winners in my book and I hope yours also. I want to make that a larger assumption. I want to include the last 6 contestants. They never would have made it that far if they did not have talent dripping from their fingers. I believe these three fashion designers with the collection they each designed set the fashion industry upon its ear tonight. I can not wait until the next season.

Toastmasters Boosted My Self-esteem
I can not tell you how terrified I was about public speaking. The thought of standing up and speaking in front of people terrified me, but I did it. I remember giving my first speech and shaking in my shoes. My eyes were focused on the wall straight ahead. I did not make eye contact with anyone.
Now after being in Toastmasters for almost 3 years I love getting up and speaking. As I had more and more speeches under my belt, I found to my surprise I was believing in myself. My self-esteem soared. I started using vocal variety and actually doing a little acting out.
This is what Toastmasters did for me. With each speech I was actually growing as a person and a speaker. I can not tell you everything Toastmasters did for me. I just know I do not want to leave Toastmasters.

Americas Next Top Model Tyra Banks
I have been watching all the old reruns of Americas Next Top Model. I still can not believe the exotic, creativity Tyra Banks thinks up for the models who are in an exciting, emotional competition.
These girls dangle from great heights on hooks, to freezing on top of high buildings.
The imagination can go on and on when the girls compete in a weekly series and try to stay on the show one more week. I love when the make up is applied to their face and bodies. Their hair is so exotic sometimes the girls are unrecognizable.
The clothes and shoes are so high fashion I use my imagination and think about what it would be like to see me in all that fantasy. The new season should be starting soon. When the girl wins the role of Americas Next Top Model her life is secure.
The other girls especially the last six will have to work a little harder to achieve their dream. Girls keep on trying.

Small People Big World The Roloff Family
Television is getting more and more interesting. This weekly television series about a typical family and their everyday hum drum life. This is the Roloff family Matt, Amy, Zach, Jeremy, Molly and Jacob. No – No- this family is everything but typical.
First of all it is about dwarf parents of 4 children. The mom, Amy, really has her hands full trying to keep up with all the men in the family. The 17 year old twin boys Zach is the dwarf and Jeremy is 6 ft. Then there is a normal size sister, Molly about 12, and a ten year old brother, Jacob age 10. Zack leads an amazing life on the Roloff farm. He keeps up with his brothers and sisters. This is not an ordinary farm. The dad, Matt, keeps everybody busy always inventing and building some new type of imaginative building on the farm.
There is a Pirates boat, tree house and many other unusual outer buildings. The whole family is so unusual you have to watch every week to keep up with their hectic lives. It is filled with sports, working, farm work, childish squabbling among the kids. They love to take vacations and you get to go along with them on their various vacations - children’s squabbling and all.
It is almost like your family vacation. The family confronts challenges everyday regarding clothes sizes, driving, and just doing ordinary things like grocery shopping.
The dad is handicapped since a small child. He is either on crutches or on an electric scooter. He brings to the television series all kinds of problems the handicapped can come in contact with. It is hard trying to keep up with the walking world. You do not have to be a dwarf to have this issue to deal with being handicapped. Please keep up the good work Roloffs.

Do You Know How to Write An Appeal Letter?
Would you like to learn how to write an appeal letter?
As you are all well aware of by now, trying to get your personal medical bills paid can sometimes become a battle. The last man remaining in this war is the winner.
Now imagine in a large billing office thousands of patients bills never being paid or not being paid correctly. The person whose wonderful job this is to appeal these bills needs to write letters and needs to know how to create the proper letter.
My job in this large office was to do just that write letters. I wrote all kinds of appeal letters to every insurance company known to mankind. I quickly found out something amazing with my fellow employees either temporary workers or permanent workers they did not know how to write the correct letter which would get their patient’s bills paid.
I was asked all day about how a letter should be written and I quickly put my letters onto a CD. The CD was passed from person to person. I made sure I told all the people who were using this CD that each letter is an individual and you can not blankly use the letter I gave them, they would have to change it and make it personal.
This is what I am trying to convey to you, the consumer. When you send an appeal letter to your insurance company for any reason, you have to use the first 2 lines to make it the reason for your appeal letter.
I have written sample letters in my book, “How to Appeal Medical Bills.” This book is easy to use and is an excellent guide for the consumer as well as the Medical Provider.
I also wrote a book called, “Appeal and Collection Letters for Medical Providers.” There are sample letters and forms for their use. Writing a letter correctly for the benefit for your bills to get paid and paid correctly is critical.

Being Asked Advice About Medical Care
I do not go looking for this but it pops into my hearing and conversation almost with every person I know.
Is it because they know I have worked in Medical Insurance Billing for almost 20 years. Or is this the case that the medical care and insurance have been sliced apart.
How do we fix is? This is asked by the most highly educated to the barely educated. I do not know but I am only one person. Asking the experts do not get us anywhere either.
The people you need to ask are the people in the medical field who work in medicine and the billing part.
We need to put the practice of medicine back into the hands of the medical provider and not in the hands of the insurance company.
We are going to be having a new president soon. Who ever it is needs to address this problem pronto. This is the breakdown of the family, employment, and the medical community.

Smogging Your Car Can Cause Anxiety
I had my old car smogged today.
And it passed.
I was scared and I don't think I was breathing for a few minutes.
But it passed.
I could breathe again and said a prayer skyward.
Getting my car smogged is always traumatic for me.

Consumers Beware Of Plumbers
If you need a plumber get at least 3 opinions.
When I needed a plumber I called a plumbing company.
They quoted me $2000.00 and then told me my whole Mobile Home needed new plumbing.
They wanted to charge me $600.00 to move my water heater and $400.oo for a new one and to replace it back where it goes. I went 4 days without running water.
Thankfully, I had a friend or guardian angle. He told me to buy the parts at Home Depot which came to $25.00 and he charged me $ 100.00.
When I say do your homework before taking on just any plumbing company. I mean it.

Writers Conference
I went to a Writers Conference this past week. My head is still swimming from all the ideas which were presented. But you have to have money in the bank in order to make money.
If you want to write a book and self-publish it - think before you rush your book to the publisher.
This can become an extremely expensive hobby or enterprise. But if you love writing go for it.
